Method:

  • First, prepare the peppers. Cut the tops off. Remove the seeds. Remove the white parts inside. Keep the tops for later. Or chop them and add to the filling. Wash the peppers. Keep them aside.
  • Second, make the filling. Heat olive oil in a pan. Add onion. Cook till soft. Add garlic. Cook for one minute. Add crumbled tofu. Cook for five minutes. The tofu will become slightly dry.   • Fourth, stuff the peppers. Take each pepper. Fill it with the tofu rice mixture. Press it down gently. Fill it to the top. Do not overfill. Or it will spill.
  • Fifth, bake the peppers. Preheat the oven to 375 degrees. Place the stuffed peppers in a baking dish. Add a little water to the bottom of the dish. This creates steam. The peppers cook evenly. Cover with foil. Bake for 25 minutes. Then remove the foil. Bake for 10 more minutes. The peppers become soft. The tops become slightly crispy.

Important tip for tofu: Press the tofu first. Take the block. Put it between paper towels. Put something heavy on top. Wait for 15 minutes. The water drains out. The tofu becomes firm. It crumbles better. It absorbs flavour better. Do not skip this step. I skipped it once. The filling was watery. Not good.

This is the classic version. Rice is the base. Tofu is the protein. Vegetables add colour.

Ingredients:

  • Bell peppers. Four.
  • Cooked rice. Two cups.
